Shrimp Pad Thai

Paleo recipes for weeknight meals can be very helpful. When you're hungry and late from work, or the soccer game for your kids goes into overtime, knowing what to make quickly can be the difference between staying the course or derailment via the closed drive-thru. You'll be even more motivated to make a quick meal when you know it will be delicious.

In under 20 minutes, a few bags of pre-cooked broccoli slaw with some salad shrimp can be transformed into a Paleo version of this take-out favorite. Even frozen shrimp can be used with an extra minute of cooking. If you want to make it Autoimmune Protocol friendly, just leave out the cashews.

Paleo Shrimp Pad Thai Recipe

Prep Time: 10 Minutes

Cooking time: 10 Minutes

Serves: 2-to-3

Ingredients:

  • Coconut oil or another cooking fat
  • 1/4 cup fish sauce
  • Fresh lime juice, 6 tablespoons
  • 2 cloves garlic, crushed
  • Two 12-oz bags of broccoli slaw (8-10 cups)
  • 1-2 large carrots julienned, or grated thickly
  • Precooked 12-16 oz Salad Shrimp, tails off
  • Fresh cilantro chopped to 1/2 cup
  • Green onions, 2-3 slices
  • Cashews, roasted and unsalted (omit if AIP).

Directions:

  1. Heat a large wok or frying pan over medium heat. Add the coconut oil, lime juice and garlic to the broccoli slaw. Stir frequently for 5-7 minutes until the broccoli slaw is al dente.
  2. Add shrimp, and cook for 2-3 minutes until shrimp is warmed. Add green onions and cilantro, and cook for 30 seconds more.
  3. Cashews chopped in small pieces are a great garnish.

Also, consider adding low-sugar foods like avocados and olives to your diet. These two groups are high in healthy fats.

Paleo is all about moderation and incorporating other nutrients. Paleo encourages you to indulge in delicious ripe fruits. After all, don't forget to enjoy your food too!


Can you eat popcorn on the Paleo diet?

When exploring the Paleo diet it is important to be informed about the best snacks and meals that fit into the plan. One of the popular food items that can be confusing to include is popcorn. Can you eat popcorn on the Paleo diet?
