Easy Gluten-Free Flatbread (5-Ingredients!)

This gluten-free, soft flatbread is easy to make and can be ready in just 30 minutes. Use it as a base for pizza, sandwiches, and soups. There are so many options!

We get many requests for gluten-free breads on our blog. It was a disaster when we got to the kitchen.

After some research, we discovered that a gluten free flatbread is a simpler bread because it doesn't require rising or baking. This fluffy, gluten-free flatbread was created after a few failed attempts and several rounds of testing.

Ingredients you'll need

  • Gluten-free flour It is better to use an all-purpose flour blend than single flours like almond flour, coconut flour or cassava flour. These flour blends contain ingredients like tapioca starch or xanthan gum. This gives the flour an elastic texture that is similar to all-purpose wheat flour. Because we are most familiar with Bob's Red Mill 1:1 Baking flour, we prefer it. We cannot guarantee that any other gluten-free flour mix will work.
  • Oil We used extra-virgin olive oil. However, you could use any other neutral oil. You can use avocado oil, vegetable oil or coconut oil.
  • Baking Powder:Flatbread was traditionally made without leavening agents. However, we found that this gluten-free version required a small amount of baking powder in order to lighten its texture.
  • Vegan yogurt: For a neutral tasting flatbread, use unsweetened, plain yogurt. This flatbread was tested with Forager, Silk, as well as So Delicious. All of them were good. You can substitute vegan buttermilk if you don't have vegan yogurt. This recipe is for the Fluffiest Vegan Buttermilk Pancakes.

Equipment required

  • Large mixing bowl
  • Wooden spoon
  • Rolling pin, wine bottle
  • Cast iron skillet or griddle
  • Spatula
  • Optional: Pastry brush

How to make gluten-free flatbread

  1. Combine the wet ingredients. Mix the wet ingredients in a large bowl.
  2. Sprinkle flour on top. Combine the flour with the wet ingredients until you get a dough. The dough should be soft and smooth. Add 1/2 teaspoon of flour to make the dough sticky. Add 1/2 teaspoon of water to make the dough soft and smooth.
  3. Divide the dough into eight equal parts. Each section should be rolled into a ball. Each section should be rolled into a ball on a floured surface.
  4. Cook the flatbread. Place the flatbread on a greased baking sheet and bake for 1 1/2 to 2 minutes each side or until golden brown.
  5. Use optional garlic oil to brush the bread. After the gluten-free flatbread has been cooked, place it on a plate. Garnish the flatbread with garlic olive oil, vegan butter or garlic powder. Sprinkle on fresh parsley.
  6. Continue the process with the dough. Continue rolling out the dough balls, and cooking the gluten-free flatbread until all of the dough is cooked.
  7. Serve. This gluten-free flatbread recipe can be enjoyed warm or at room temperature, depending on your preference.

What should I serve homemade flatbread with?

There are so many ways to make homemade gluten-free flatbread! These are our top picks for how to enjoy it.

  • You can use it as a pizza topping: If you don't have the time to make homemade pizza dough, this flatbread is a great alternative. It's great with our White Pizza with Zucchini & Tomatoes, or our Vegan Chicken Pesto Pizza.
  • Serve with curry:Flatbread can be eaten with curried sweet potato soup, easy vegan chickpea and cauliflower curry, and easy vegan butter chicken.
  • Pair soup with bread: It's impossible to go wrong when you pair soup and bread. This flatbread is great with any of our favourite soups!
  • Use it as a sandwich wrap:Substitute tortilla for flatbread to enjoy these Chickpea Salad Wraps or Mushroom Caesar Salad Wraps, which are wrapped in a similar way to a Gyro.
  • Combine with protein: Serve this flatbread with protein such as baked falafel or spiced chickpeas or our classic hummus and crispy tofu for a simple, delicious meal.

Instructions for Storage and Freezing

Flatbread made without gluten will last up to six days in an airtight container at room temperatures. Although this bread can be refrigerated it will become more dense.

We recommend freezing your flatbread to prolong its life. Let the bread cool completely on a wire cooling rack. Then freeze it in a large freezer bag like a Stasher bag. You can also place a piece parchment paper between each flatbread to prevent sticking. Frozen flatbread can be kept for up to three months if it is sealed tightly.

Simply place the frozen flatbread on a counter and let it thaw at room temp. Once the flatbread is pliable, heat it in a skillet or toaster oven until it's warm.

Expert Tips

  • Cast iron is better than nonstick pans. Cast iron helps to create a golden crust and allows the flatbread to cook faster.
  • It may be necessary to adjust the flour amount. Gluten-free baking is not easy. It depends on the flour brand and environmental factors. Add flour to make the dough more moist. Add more water if the dough is too dry.
  • Use weighted measurements whenever possible to get the best results. This recipe is great for those who have a baking scale. Each ingredient was measured in grams. However, this information is only for the brands that we used. The measurements can be affected by changing the brands.
  • Keep warm in a warmer drawer. To prevent your gluten-free flatbreads from becoming cold, heat them on a baking sheet or hot plate.

Description

Ingredients

  • 1 1/3 cups (240g) unsweetened plain vegan yogurt (I used Forager)
  • 8 teaspoons 36g olive oil
  • 2 teaspoons (9g) baking powder
  • 1 teaspoon Salt
  • 2 cups + 1/2 teaspoons ( 314g). Bob's Red Mill 1:1 Gluten Free Baking Flour + More as Needed

Optional

  • Olive oil with garlic
  • Finely chop fresh parsley (or other herbs of your choice).

Instructions

  1. Mix the vegan yogurt, olive oils, baking powder, and salt in a large bowl until well combined.
  2. Mix the flour-free gluten over the wet mixture until it forms a dough. This is important because you want a soft, smooth dough that doesn't crumble and isn't too sticky. Add 1/2 teaspoon of flour to make the dough sticky. Add 1/2 teaspoon of water to make the dough moister.
  3. Pat dry a floured work surface. Heat a greased skillet on medium heat. Cast iron griddles or skillets are preferred as they yield better results than non-stick pans. A granite counter, a marble or plastic cutting board is also a preferred choice. We have found it to stick less.
  4. Divide the dough into eight balls and form each one into a ball. One ball of dough should be placed on a floured surface. Roll the dough out using a rolling pin, a bottle or tin foil until it measures 1/4 inch thick. Place the dough on a heated pan. Cook for 1 1/2 to 2 5 minutes each or until it is browned and cooked through. To ensure it doesn't burn, check the dough every 1 1/2 minutes. Reduce the heat if it is cooking too quickly. Our first flatbread is often the best test of heat/cooking time. The remaining flatbreads cook faster and more efficiently.
  5. Transfer the flatbread onto a plate. You can brush the flatbread with olive oil or sprinkle it generously with parsley.
  6. Continue cooking the dough until it is all cooked. Serve warm. Keep it in an airtight container for at least 4-6 days.

  • This recipe was taken from Tasty.
  • We cannot guarantee that any other gluten-free flour mix will work because they are all different.
  • If you don't have gluten-free flour, regular all-purpose flour will work.
  • You can use garlic olive oil instead of garlic butter for brushing.
  • This recipe can be used in place of Forager by being tested with vegan yogurt brands such as Silk and So Delicious.
  • If the dough is too sticky, you may have to adjust the flour or add more water. To prevent this, I have shared the weights of all the ingredients.
  • You can substitute any oil for the olive oil in your bread.
