Easy Taho Recipe with Arnibal

The Taho recipe requires only 4 ingredients and is easy to make in just a few steps. This Taho is sweet and pudding-like. It is also rich in protein due to the soft tofu. You can make it at home and take your first bite back to the Philippines.

What is Taho?

Taho, which is a Filipino street food, is made with soft, warm tofu, tapioca pearls or sago, as well as sweet arnibal and a common taho. Taho can be enjoyed as a breakfast food, but it is also a sweet snack or dessert in the afternoon.

This popular snack was created in China during the Han Dynasty. According to legend, it was first created by a cook trying to make soymilk, but curdling the milk instead gave rise to a silky, tofu-like consistency. It has since been popularized in many Asian countries, and is very similar the taho that we have today in the Philippines.

There are many types of taho. This homemade version is made with the classic, sweet brown sugar syrup, and silky smooth tofu. We think this Filipino delight will be as popular as our other street food favorites, such as Turon (Banana Lumpia), and Banana Cue.

Ingredients you'll need

  • Sago pearls and Tapioca PearlsSimilar in taste to tapioca pearls that you might have tried in boba milk teas. Sago pearls are made of the pith from the tropical plant, the sago palm. Although the pearls are not very flavorful, once cooked they are soft and chewy. Cassava-based tapioca balls can be substituted for sago if you are unable to find it. Tapioca was not available in my area so I used tapioca instead.
  • Soft Tofu:We like the consistency of fresh tofu in our taho. But if you want your taho to be even softer, use warm silken.
  • Brown sugar:Both light and dark brown sugars will work well. Organic brown sugar will ensure that your sugar is vegan. Non-vegan filtration can be used to make conventional sugars.
  • Pandan Leaf: This green leaf adds flavor to the arnibal sauce by containing hints of vanilla and coconut flavors. You can find pandan leaves in your local Asian market. If you need to replace them, substitute 1 teaspoon with vanilla extract or pandan extract.

How to cook tapioca pearls

  1. Bring a large pot of water to boil. Bring 6 cups of cold water up to boiling in a large saucepan on medium heat. To prevent sticking, heat the water to boil and add the tapioca pearls.
  2. Cook the pearls. Turn down the heat to medium and cook for 5 minutes. Mix well. Cover the pan and let it cool for 10 minutes.
  3. Rinse under cool water. Drain the excess water after 10 minutes and rinse the tapioca pearls under cool water until they are dry.
  4. Boil 6 more cups of water. Bring 6 more cups of water to boil. Then add the tapioca pearls partially cooked.
  5. Boil the tapioca again until it becomes translucent. The tapioca should be brought to a boil again. After that, turn off heat and cover the pot. Let the tapioca sit for seven minutes. The tapioca pearls will become fully translucent when they are cooked.
  6. Rinse and drain. Let the tapioca cool under cold water until it is completely cooled. Then, let it sit while you prepare your remaining Taho ingredients.

Homemade Arnibal (Sweet Syrup Recipe)

  1. Mix the brown sugar and water together. Mix the brown sugar with water in a small saucepan or pot.
  2. Add the pandan leaves. Stir the mixture for 3 minutes, and then bring it to boil.
  3. Set aside. Set aside the pandan leaf.

Make the Tofu

  1. The tofu should be boiled. Steam the tofu in a cheesecloth-lined steamer for 7-10 minutes, or until it is heated through. You can also microwave the soft tofu for approximately 1 minute, or until it is heated through.

How to Make Taho

  1. Layer silken tofu in a glass or dish. Use a spoon to scoop out thin layers of the steamed silken tfu. It is best to use a narrow glass so you can see all the layers.
  2. Sprinkle with arnibal. Sprinkle 1 to 2 teaspoons anibal on top of the tofu.
  3. A scoop of tapioca pearls can be added to the arnibal. Add a little tapioca to the top of your arnibal.
  4. Continue to layer. Layer your taho layers until you have filled your dish with all your ingredients.
  5. Serve. Enjoy your Taho at room temperature or warm!

Serving Suggestions

Taho should be eaten warm right away after it has been assembled. This makes a great breakfast, snack, dessert, or even dessert. It can be enjoyed with a spoon or straw or straight from the cup. Warm taho can be enjoyed at any hour of the day.

If you prefer your taho colder, skip the steaming and let your pearls and your arnibal cool down before assembling.

Storage Instructions

You can make the cooked tapioca pearls or arnibal up to three days ahead and store them separately. Cooked tapioca pearls should be kept covered with water and stored in an airtight container in a refrigerator until they are ready to be used. The same goes for arnibal. It is best to store it in an airtight glass container.

When ready to serve, heat all ingredients, including the tofu. Layer and serve this Filipino classic dessert in any of your preferred serving glasses.

Description

Ingredients

  • 11 cups filtered water, broken
  • 1 cup tapioca pearls, dried * (see notes)
  • 1 block soft tofu
  • 1 1/4 cup brown sugar
  • 1 pandan leaf (I used dried)

Equipment

    • Small saucepan and large pot

    • Fine mesh strainer

    • Optional: Cheesecloth

    • Steamer basket, oven-safe dish

    • Whisk

    • Slotted spoon

    • Serve glasses or a dish

Instructions

Tapioca

  1. Boil 5 cups of water in a saucepan over medium heat. To prevent sticking, add tapioca pearls and stir immediately.
  2. Cook on medium heat for 5 minutes. Stir frequently.
  3. Turn off the heat and cover the tub for 10 minutes.
  4. Drain the tapioca pearls and rinse them with running water until they cool down.
  5. Bring 5 cups more water to boil. Add the partially cooked tapioca.
  6. Bring back to a boil. After boiling, reduce heat and cover the pot. Let it sit for seven minutes. It should be completely translucent when it is done.
  7. Once the sago is completely cooked, drain it and rinse it under cold running water until it cools down. Set aside.

Tofu

  1. Put the tofu in a cheesecloth-lined steamer. Steam for 7-10 minutes, or until heated.
  2. Alternativly, you can place the tofu in a microwave-safe dish. Microwave for approximately 1 minute or until heated.

Arnibal (Syrup).

  1. Add 1 cup water, brown sugar, pandan leaf, and 1 cup water to a small saucepan. Whisk.
  2. Bring the mixture to boil. Continue to stir the mixture for three minutes, until it is boiling. Set aside the pandan leaves.

Assembly

  1. Layer thin layers of tofu in a bowl or serving dish. Next, add a spoonful of tapioca and then drizzle the arnibal. Continue layering until your serving glass is full.
  2. You can either keep it warm or cool it down to enjoy the cold.

Notes

  • Tapioca pearls were what I had on hand, but I recommend using sago if you have it!
  • In place of the pandan leaves, you can substitute 1 teaspoon vanilla extract or pandan extract.
  • You can skip the steaming step if you prefer your tofu cold.
  • You can make the cooked tapioca pearls or arnibal up to three days ahead and store them separately. Cooked tapioca pearls should be kept covered with water and stored in an airtight container in a refrigerator until they are ready to be used. The same goes for arnibal. It is best to store it in an airtight glass container.

There are many vegan alternatives that can replace traditional meat-centric dishes. They have the same texture and flavor, however. You can get the same flavor from soy-based proteins like seitan (wheat bread gluten), tempeh and mock duck made out of mushrooms. Vegetarian burgers made from black beans and quinoa are also comparable to beef burgers. Coconut bacon strips, eggplant bacon bits or tofu mighto; veggie hot dog made with seasoned and textured soy proteins; and faux poultry strips from wheat gluten are other tasty options.
