Garlic Scape Pasta (vegan, gluten free)

Ingredients

  • 4 oz ditalini pasta gluten free if desired
  • 2 tbsp olive oil extra virgin, more as needed
  • 2 shallots large, finely diced
  • 10-12 garlic scapes finely chopped
  • 1/2 tsp red chili flakes
  • 3 sprigs fresh thyme
  • 1 tsp salt kosher, more to taste
  • black pepper fresh ground
  • 1/2 lemon zested
  • 1/2 lemon juiced

Instructions

  • Bring a medium pot of heavily salted water to a rolling boil, and then cook the ditalini following the instructions on the package. Reserving 1/4 cup pasta water, strain and set aside.
  • Cut your garlic scapes finely into pieces similar to the ditalini you are using.
  • Once the olive oil is hot, add your shallots. Add salt and pepper, and cook for 3 to 5 minutes stirring occasionally, until translucent.
  • Sauté the garlic scapes, chili flakes, and thyme for 2-3 more minutes until they are bright green to your taste. The scapes should be slightly crunchy, like asparagus, but still tender enough to eat.
  • Add the pasta and toss to coat. As needed, add pasta water, fresh lemon juice and salt and pepper according to taste. Garnish with lemon zest and serve.
