Prepare the dough

Step 1: Place the water, yeast, sugar and salt in a bowl. Allow it to foam for 5 minutes. In a separate mixing bowl, combine the flour and salt. Add the olive oil and yeast mixture. Mix with a wooden teaspoon until a shaggy, crumbly dough begins to form.

Step two: Kneading the dough on a clean surface for 5 minutes. You want your dough to be slightly sticky for this recipe.

Step 3: Place the dough in a large, oiled bowl. It is important to turn it several times in order for the oil to cover all of the dough. Cover the dough with a wet towel and place it in a warm area for 1 1/2 hours. The dough will grow by half during this time.

Step Four Punch the dough down. It is essential to do this when you are making dough. It allows you to form the dough and knead it. We're now ready to move onto the next step.

Prepare the Bread

Step 1: Roll the dough into a shape of 12 x 18 inches using a rolling-pin. Spread the walnut pesto on top of the dough.

Step two: Roll the dough lengthwise to form a log. Use a dental floss or a sharp knife to cut the dough into nine or ten equal pieces.

Step three: Grease an 8 x 4 inch loaf pan with vegan Butter. Line the pan with parchment paper. Leave a small overhang on both opposite sides. Once the bread has been baked, it will be easier to remove. Place the pieces in the loaf pan, zigzagging them to make a pattern. Cover with plastic wrap. Place the loaf pan in a warm place for 45 minutes so that it can rise slightly.

Step four: To bake, pre-heat your oven to 180degC (350degF). Remove the plastic wrap, and then brush olive oil on the top of the pies. Bake for 30 to35 minutes. Halfway through the baking process, cover with aluminum foil. The tops will not get too dark. Insert a toothpick into the center to check if it is still doughy.

Step Five Remove the pan from the oven and allow it to cool for 15 minutes. Let it cool down completely before serving.

This pull-apart loaf is the perfect appetizer or snack for any crowd. It features a fluffy brioche style dough with a nutty pesto. This recipe may look and taste impressive, but it is quite simple. It's the same method as making cinnamon rolls. You just press the rolls in a loaf pan instead of using a muffin tin to create the fancy swirl pattern.

For the Bread

  • 3/4 cup water 175 ml
  • 2 tablespoons organic cane sugar 24 grams
  • 1 1/2 teaspoons active dry yeast 4.5 grams
  • 2 1/2 cups all-purpose flour 300 grams
  • 1 teaspoon kosher salt
  • 3 tablespoons olive oil, plus more as needed 45 ml
  • Vegan Butter For Pan

Pesto

  • half cup tightly packaged fresh basil leaves
  • 1 cup raw walnuts
  • 1 teaspoon minced garlic about 2 small cloves
  • 1/2 cup olive oil
  • 2 teaspoons nutritional yeast
  • 1 teaspoon salt

Optional for Serving

  • Marinara sauce for serving

Instructions

How to Prepare the Dough

  • In a microwave, or in a small pan on the stovetop, heat the water until it is lukewarm (110-115degF [43-46degC]). Add the sugar and yeast. Allow the mixture to stand for five minutes or until the yeast foams. Notes below ).
  • Mix the flour with the salt in a large bowl. Pour the olive oil into a large bowl and add the yeast mixture. Mix with a wooden spatula until you get a shaggy-looking dough. Spread the dough out on a clean surface and knead it for 5-6 minutes or until soft and springy. Wet your hands and continue to knead the dough if it feels dry. Add a little flour if it sticks to your hands.
  • Put the dough into a bowl that has been well oiled and turn it over several times to coat the surface. Cover the bowl in a damp, clean towel and leave it in a warm place to rise for an hour and a half, or until your dough has doubled.

How to Make Pesto

  • Combine all ingredients in a powerful blender or food processor. Blend until smooth and creamy.

How to Prepare the Bread

  • Line an 8-inch loaf pan (20 x 10 cm) with parchment paper and grease it with vegan butter. Leave a small overhang at the two opposite corners for ease of removal.
  • After the dough has risen and been beaten down, it is ready to use.
  • Roll out the dough into a rectangle measuring 12 inches by 18 inches (30 cm x 45 cm).
  • Spread pesto on the dough surface, and then roll the log lengthways.
  • Use a sharp knife to cut the dough into equal pieces of nine or ten. You can also use a piece of clean dental floss.
  • Press each roll in the loaf pan, alternately pressing both sides to form a zigzag design. Place the pan in a warm place and cover it with plastic wrap. Let it rise for 45 minutes.
  • Pre-heat the oven at 350degF (182degC) when you are ready to bake. Remove the cover from the bread, and brush it with olive oil.
  • Bake for 30 to35 minutes or until the top is a rich golden brown. Cover the top with aluminum foil halfway through the baking time to prevent it from becoming too dark.
  • Test the center with a toothpick. Remove the cake from the oven, and allow it to cool for 15 minutes in the pan before transferring the cake to a rack to finish cooling.

Notes

It's important that you "bloom" your dry active yeast before adding any other ingredients. It's important to ensure that the water is warm, but not too hot to kill the active dry yeast. To be on the safe side, I suggest using a temperature gauge if you are new to baking bread. If your yeast does not foam in the first five to ten minutes, then it is dead. You will need to buy a new package.
Note about the pesto. The World of Vegan walnut Pesto recipe can make some extra. Leftovers can be used as a spread for sandwiches or pasta.
