Vegan Empire Cookies

You'll never find a better vegan empire cookie recipe! This is the vegan version of classic empire cookies that are not vegan. I made empire cookies with my family as a child and wanted to create a vegan version!

What are empire biscuits? These cookies are made of shortbread, sandwiched with a layer tart jam and decorated with glace cherries, cranberries or currants.

DAIRY-FREE

This recipe for vegan empire cookies is made using vegan butter, sugar and flour. It also includes vanilla and other tasty and simple baking ingredients.

These cookies are soft, sweet and delicious! These vegan cookies are baked to perfection and topped with icing, a glace cherry, or cranberry.

These empire-shaped cookies are vegan and dairy-free. They could be made gluten free with gluten-free wheat flour.

Equipment

  • Stand Mixer
  • 1 cookie cutter
  • 1 Silicone baking mat
  • 1 parchment paper
  • 1 vented cookie sheet

Ingredients

Vegan Empire Cookie Base

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt if using unsalted vegan butter
  • 1/2 cup vegan butter 1 stick
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened soy milk or aquafaba

Vegan Filling

  • 1 cup raspberry jam roughly, as needed

Vegan Royal Icing

  • 1 cup confectioner's sugar
  • 1 tbsp soy milk
  • 1/4 tsp almond extract optional
  • Dried cherry or cranberries

Instructions

  • In a large mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
  • Cream the vegan butter in a large bowl using a stand mixer or if you have a hand mixer. It should take about 3 minutes.
  • Beat until fluffy. Add aquafaba or soymilk and vanilla extract.
  • Mix the flour mixture until just combined.
  • Wrap the dough in plastic wrap. Place the dough in the refrigerator for 30-60 mins until it is easy to handle.
  • Line baking sheets using silicone baking mats, parchment paper or lightly flour the surface of your work (you want to use as little as possible).
  • Roll the dough out to a thickness of 1/8 inch. Cut out the dough using a cookie-cutter and place it on the sheets. Repeat with leftover dough.
  • Bake the cookies at 350F until they are firm. The edges may have a very slight golden color, but should not be brown. Transfer the cookies to a cooling rack with wires and let them cool completely.
  • Find a friend for each cookie and pair them together when they have cooled.
  • Place the second cookie gently on top of one pair. Spread the raspberry jam over the first pair.
  • To create a thin icing, combine confectioners's sugar, soymilk, and any almond extract you may be using in a small bowl.
  • Frost the tops of the cookies by spreading them out to just beyond their edge. Top each cookie with a tiny piece of dried cranberry.
  • Enjoy immediately. Store in an airtight container, at room temperature.
