There are many vegan soup recipes on this blog. But there is something special about homemade lemon orzo. This soup is as delicious as Vegan Chicken Noodle Soup but has a fresh twist to keep it light and bright. ).

This family favorite soup is so easy to make, you'll want to make it every week in the cooler months!

Ingredients you'll need

  • Vegan Butter:Used for sauteing the vegan chicken with aromatics. Vegan butter is richer than standard cooking oils, but you can use any cooking oil to suit your needs.
  • Vegan Chicken:There is a wide variety of vegan chicken available in the grocery store today. Choose your favorite! You can substitute the chicken with other plant-based proteins, such as 8 ounces rehydrated soy curls or a can chickpeas.
  • AromaticsYou will need celery, onion, carrots and garlic. You can also add bay leaves and red pepper flake if you like. These basic ingredients add richness and depth to the base soup.
  • Flour Helps thicken soup broth slightly. Choose a flour blend that is gluten-free if you're gluten-free.
  • Vegan broth for chicken:For an enhanced flavor, we chose Better Than Bouillon Vegan Base. Use a standard veggie broth if you prefer or need it. You may need to add more salt or miso to your taste if you use a low-sodium broth.
  • Orzo : A small rice-shaped pasta which is often mistaken for rice! You can find it at the supermarket next to other pasta. You can also find gluten-free orzo at most stores if you're gluten-free.
  • White Miso Paste:Adds umami flavors to the soup.
  • Baby Spinach:Adds vibrant color and plant-based nutrition. Kale is another leafy green that works great!
  • Lemon:Essential to give your lemon orzo soup that bright, refreshing flavor. You'll need about half a lemon juice, and additional lemon zest if you like.
  • Vegan Parmesan Cheese:We have used both store-bought and homemade vegan parmesan, and they work great. Use your favorite!
  • Fresh Parsley:Parsley can be used to garnish soups, but it is also a great addition directly to the soup. It adds a freshness that adds zing and flavor.

How to make vegan lemon chicken orzo soup

  1. Brown the vegan poultry. Melt 1 tablespoon vegan butter in a large pan over medium heat. Sauté the vegan chicken until it is crispy and browned. Remove the chicken from the pan and set it aside.
  2. Sauté the aromatics. Add the remaining vegan butter to the pan and then the celery carrots and onions. Sauté for 5 to 7 minutes or until fragrant and softened. Add the bay leaf, garlic, and Italian seasoning and continue to sauté for another minute.
  3. Add flour. Add flour. Stir to coat all the vegetables. Cook for 1 minute.
  4. Add vegan chicken stock. Pour the vegan chicken stock and stir until all the flour is dissolved. Bring the soup to a rolling boil.
  5. Once the soup broth is boiling, stir in the orzo pasta and vegan chicken cut into bite-sized pieces. Stir in the orzo and vegan chicken bite-sized once the soup broth has boiled.
  6. Orzo should be cooked for nine minutes or until it is tender. Orzo should have the same texture as pasta al dente when it is done. Once the orzo is cooked, remove the Bay leaves and turn the heat down to low.
  7. Add the miso paste, and all the other ingredients. Add about 1/4 cup of chicken broth to a small dish. Add the miso paste and whisk until smooth. Then add it to the soup, along with some fresh spinach, lemon juice, lemon zest, and vegan Parmesan.
  8. Serve with seasoning. Serve immediately. Season to taste with black pepper and salt. Enjoy!

Serving Suggestions

This Vegan Lemon Orzo Soup can be enjoyed on its own, with vegan crackers or crusty toast. Ours is often served with Vegan Garlic Bread, or a slice from our 4-ingredient No Knead Bread.

This soup pairs well with other simple dishes, like a Caesar Salad with Brussels Sprouts, Grilled Romaine with 5-ingredient Croutons or Pan Fried Asparagus.

Can I make the soup gluten-free?

Gluten-free flour can be used to make this vegan orzo. Use a vegan gluten-free chicken. Some, like our Vegan Chicken Nuggets contain vital wheat gluten and other gluten-containing components.

Instructions for Storage

In an airtight container, leftover soup can be kept in the fridge for up to five days. This vegan lemon orzo is not recommended for freezing as pasta does not freeze well.

Reheat the soup in the microwavable or in a small saucepan on the stovetop. Overheating can cause the pasta to become mushy.

Ingredients

For the soup:

  • 3 tablespoons vegan butter
  • 1 (8-ounce) bag vegan chicken
  • 1 medium onion, chopped
  • 3 ribs celery, chopped
  • 3 medium carrots, peeled & chopped finely
  • Optional: ½ tsp red pepper flakes
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons all-purpose flour
  • 8 cups vegan chicken broth
  • 8 ounces uncooked orzo
  • 1/2 tablespoon white miso
  • Handful of fresh spinach
  • Optional: ¼ to 1/2 lemon, zested (to taste)
  • Juice of ½ lemon, or to taste
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper, to taste

Garnish:

  • Chopped fresh parsley
  • Lemon wedges
  • Crackers or bread

Instructions

  1. Brown the vegan chicken. In a large pot over medium-high heat, melt 1 tablespoon of vegan butter. Add in the vegan chicken and sauté until browned and crispy on the edges. Remove the chicken and set aside and cool. If the vegan chicken is in large pieces, cut it into bite-sized pieces.
  2. Sauté the aromatics. Add the remaining vegan butter to the pan, then add in the celery, carrots, and onions. Sauté for 5-7 minutes, or until softened and fragrant. Stir in the garlic, bay leaf, and Italian seasoning, and sauté for 1 additional minute.
  3. Add flour. Stir in the flour, coating all of the vegetables, and cook for about 1 minute to hydrate.
  4. Add vegan chicken broth. Pour in the vegan chicken broth, and stir until the flour has dissolved, then bring the soup broth to a boil.
  5. Stir in the chicken and orzo. Once the soup broth is boiling, stir in the orzo pasta and vegan chicken cut into bite-sized pieces.
  6. Cook for 9 minutes, or until the orzo is tender. When the orzo is ready, it should be the same texture as al dente pasta. Once cooked, remove the bay leaves and reduce the pot to low heat.
  7. Whisk in the miso paste and the remaining ingredients. Remove about 1/4 cup of the chicken soup broth from the pot and add it to a small bowl. Whisk in the miso paste until smooth, then add the miso mixture to the soup along with a handful of fresh spinach, lemon zest, lemon juice, a handful of fresh parsley, and vegan parmesan.
  8. Season and serve. Season with salt and black pepper to taste, then serve immediately with vegan crackers or bread. Enjoy!
