Can you call it a barbecue in the summer without a large bowl of pasta salad cold? I don't believe so! Bring along a sheet cake of chocolate to satisfy a large crowd.
Vegan Pasta Salad makes a delicious side dish to barbecue favorites such as veggie burgers and grilled vegetables with barbecue sauce. The pasta, bell peppers, red onion, and pepperoncini peppers are covered with a light, briny Italian dressing.
The pasta salad recipe is great for many reasons, but my favorite is how simple it is to make and that you can store it away for several days. The flavors actually get better over time!

Vegetable pasta salad with Italian dressing
Pepperoncini peppers, which are mild and sweet, are the secret ingredient in this Italian pasta salad! Both the salad and dressing will require them.
The pepperoncini brine, along with some herbs, red wine vinaigrette, and sugar, transforms the basic vinaigrette to a fun Italian dressing that you can use for grilled vegetables, salads and more.
Vegan pasta salad
Start by following the instructions on the package to cook the pasta. Drain the water, and then rinse the pasta in cold water to cool off. In a large bowl, combine the pasta with some olive oil and set it aside.
Mix the ingredients in a bowl, or a jar.
Stir the pasta and veggies together. Cover the bowl or wrap it in plastic and chill the pasta salad for 30 minutes.

- Can I include more vegetables? You can easily add broccoli, carrots or green onions to this recipe.
- What can I add to this pasta salad? Add vegan cheese or mozzarella, chickpeas or white beans, seeds, herbs, smoked tofu and more. I used Violife Mature Vegan Cheese, which was cut into cubes. Vegan Pepperoni is also good.
- Is it possible to make gluten-free? Yes. Replace the pasta with any favorite gluten-free pasta.
- Can it be made ahead? Of course! You can chill the pasta salad in the refrigerator for 30 minutes or more before serving.
Storing leftovers
Save leftover pasta salads in airtight containers to make weekday lunches easy. You can eat it throughout the week or serve as a side dish to dinner. If the pasta is getting dry, you can add more dressing or a dash of olive oil to liven it up.

Vegan Pasta Salad
Ingredients
- 16 Ounces Rotini or other uncooked pasta
- 1 cup halved cherry tomatoes
- 1 small red onion, sliced (2/3 cup)
- 1 cup diced cucumber
- half large red pepper, seeded, sliced and sized
- 1/4 cup sliced pepperoncini
- 1 cup sliced black olives
- 1/3 cup chopped fresh parsley
- 1 block vegan cheddar cheese, cut into cubes optional
Dressing
- 1/2 cup red wine vinegar
- 1/2 cup extra virgin olive oil
- 1 1/2 teaspoons granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 3 tablespoons the juice from the pepperoncini jar
Instructions

Drain and rinse the pasta in cold water after cooking it according to the package instructions. Toss a few tablespoons of olive in the large bowl with cooked pasta so that it does not stick together.

Chop and slice all vegetables and vegan cheese while the pasta is cooking. Set aside.

All dressing ingredients should be whisked in a medium-sized bowl until combined. Add all dressing ingredients into a jar and shake it until well combined.

Add the cheese, vegetables and dressing to the bowl of pasta. Mix well.

If possible, cover the bowl and let it chill for 30 minutes before serving. The dish will keep for up to five days. Sprinkle Vegan Parmesan on top right before serving if desired. Enjoy!
Notes
- You can leave out vegetables that you dislike and replace them with your favorite ones, such as carrots, green onions, zucchini dices, chickpeas or broccoli florets.
- To make oil-free, just leave out the vegan cheese and the olive oil.
- Gluten free? Replace regular pasta with gluten-free pasta.

It is not easy to transition to a plant based diet. You will need to manage social situations like dining out with your friends. Take proactive steps before you dine out so that you can maintain your chosen diet and still enjoy delicious food. Before you dine out, confirm the options. Not all restaurants are vegan-friendly.
If you are able to order at the venue that is suitable for vegans please have a friendly conversation with your friends and family about the food you prefer.
