Ingredients

Pasta Salad

  • 2 qt water
  • 2.5 tablespoon salt, for water only
  • 1/2 lb pasta (I used shells)
  • 2 tablespoon white vinegar
  • 1 tablespoon olive oil
  • 1 1/4 cup pesto (recipe below) + more for garnish
  • 1 cup cherry tomatoes, halved
  • 1-2 tablespoon vegan parmesan cheese
  • 1 clove garlic, minced

Pesto

  • 1 3/4 cup olive oil
  • 1/4 cup toasted pin nuts or sub with walnuts
  • 1 cup fresh basil
  • 1/4 teaspoon dried basil
  • 1 cup spinach
  • 1/2 cup red onion
  • 1/2 teaspoon garlic powder
  • 1 cup vegan parmesan cheese
  • 3/4-1 tsp salt
  • 2 tablespoon lemon juice
  • 2 tablespoon lime juice

Instructions

  • Bring water and salt into a large pot to a rolling boil. Add the uncooked pasta to the pot and cook it according to package instructions. Drain and rinse in cold water. Add to a large mixing bowl, and add the oil and vinegar.
  • Add pesto ingredients into a cup or blender while pasta is cooking. Blend well.
  • Stir well to combine pesto, remaining pasta ingredients and pasta into the bowl. Salt and pepper can be added as desired. For best results, refrigerate overnight or for at least 4 to 6 hours before serving.
