Vegan Pesto Pasta Salad
Ingredients
Pasta Salad
- 2 qt water
- 2.5 tablespoon salt, for water only
- 1/2 lb pasta (I used shells)
- 2 tablespoon white vinegar
- 1 tablespoon olive oil
- 1 1/4 cup pesto (recipe below) + more for garnish
- 1 cup cherry tomatoes, halved
- 1-2 tablespoon vegan parmesan cheese
- 1 clove garlic, minced
Pesto
- 1 3/4 cup olive oil
- 1/4 cup toasted pin nuts or sub with walnuts
- 1 cup fresh basil
- 1/4 teaspoon dried basil
- 1 cup spinach
- 1/2 cup red onion
- 1/2 teaspoon garlic powder
- 1 cup vegan parmesan cheese
- 3/4-1 tsp salt
- 2 tablespoon lemon juice
- 2 tablespoon lime juice
Instructions

Bring water and salt into a large pot to a rolling boil. Add the uncooked pasta to the pot and cook it according to package instructions. Drain and rinse in cold water. Add to a large mixing bowl, and add the oil and vinegar.

Add pesto ingredients into a cup or blender while pasta is cooking. Blend well.

Stir well to combine pesto, remaining pasta ingredients and pasta into the bowl. Salt and pepper can be added as desired. For best results, refrigerate overnight or for at least 4 to 6 hours before serving.
